Going Green

Green Cocktails - A Perfect Way to Celebrate St Patty's Day

These days going green means looking after our environment and watching our carbon footprint, but on St Patrick's Day it takes on a whole new meaning.

There are a number of alcoholic drinks which are green in color from the most obvious - Midori and creme de menthe to an oft-forgotten green liqueur called Green Chartreuse.

Green Chartreuse Cocktails

A Great Choice for St Patrick's Day

Green Chartreuse gets it's coloring from the chlorophyll found in the approximately 130 plants used to make the French liqueur. It has been around since the 1600s and was originally intended to be used as a medicine. The herbs used do give it a very "medicinal" taste. Only 2 or 3 (depending on your source) monks from the Order of Chartreuse know the secret recipe at any one time.

Green Martini

2 shots gin
½ shot green Chartreuse

Put both ingredients into a cocktail shaker with ice and shake well. Strain into a cocktail glass to serve and garnish with an olive.

Everybody's Irish

Guinness Cocktails

Guinness

Guinness Pint via Stephen Edgar on Flickr
Guinness cocktails have been known to be around since the late 1800s so some of these Guinness cocktail recipes are pretty established in the drinking world! Guinness cocktails are also a great way of drinking Guinness for those who find the creamy dark stout a little much on it's own.

Guinness was first brewed by Arthur Guinness in 1759 at his St James Gate Brewery in Dublin. This means that Guinness is celebrating 250 years of creamy goodness.

The creamy dark stout that goes by the name of Guinness must surely be one of Ireland's most famous exports. Arthur Guinness first exported Guinness to England in 1769 and over two centuries later Guinness is enjoyed all around the world even as far away as Australia.

Guinness is a delicious drink all by itself.......although there is much debate over whether it should carry a shamrock on top of it's creamy head or not. Some people, however, find that Guinness is a little too strong on it's own and this has led to a number of Guinness cocktails being created over the years. The first known official Guinness cocktail has been around since 1861 so using Irelands "black magic" in a cocktail is not something new.

Guinness Cocktails

Two of the older Guinness Cocktails in Record are the Black Velvet and the Black and Tan. Black Velvet was first created in 1861 to mourn the passing of Britain's Prince Albert (Queen Victoria's husband). The Black and Tan was first recorded in 1889, although variations (using British stouts) appear to have been around since the 1700s.

Black Velvet

1 part Guinness
2 parts Champagne

Pour Guinness into a chilled Champagne flute. Next add the Champagne carefully - it should not mix with the Guinness, and serve.

Black and Tan

1 part lager
1 part Guinness

Half fill a pint glass or schooner with lager and then carefully pour the Guinness on the top (pouring over the back of a spoon is a great method) trying to avoid any splashing which will allow the two beers to mix.

Black and Gold

A variation of the Black and Tan

1 part Guinness
1 part cider

As with the Black and Tan you half fill your glass with cider and then carefully layer the Guinness on the top.

Guinness Shandy

1/2 pint Guinness
1/2 pint lemonade

Pour the Guinness into a pint glass and top up with the lemonade.

More Guinness Cocktails

A more modern take on the Guinness cocktail is the introduction of energy drinks, personally I do not believe that drinks such as Red Bull should be added to alcohol. I am well aware that this is a growing trend however and so I am including a recipe for Black Bull. Guinness also goes well with shots of different liqueurs and spirits.

Black Bull

1 part Guinness
1 part Red Bull

Pour a tin of Red Bull into a pint glass and top up with Guinness.

Dublin Milkshake

1 pint of Guinness
1 shot Tia Maria

The easiest way of making this drink is to pour a short pint of Guinness (a cheats way if you're with friends is to get them to take a swig out of a full pint!) add a shot of Tia Maria. This really accentuates the chocolaty overtones of Guinness - yum!

Black Custard

1 pint of Guinness
1 shot Baileys

As with the Dublin Milkshake pour a pint of Guinness slightly short of the top of the pint glass and add a shot of Baileys.

I hope you've enjoyed a few of these Guinness cocktails, I was also told recently that adding blackcurrant to Guinness was a nice touch and I must admit I'm looking forward to trying that as it sounds delicious. Let me know your favorite Guinness Cocktail below.

Summertime Cocktails

Long Lazy Sunny Days Need Some Delicious Cocktails

Fire Engine Cocktail - a great summer time cocktail
There’s something special about summer, lazing around on a Sunday afternoon with friends and family either in the garden or if you’re lucky enough besides/in the pool. A nice refreshing drink to sip on while you’re in the shade is always welcomed and it was because of lazy days like this that the Pimms cocktail was invented for everyone to sip whilst watching the tennis or cricket, relaxing in sun loungers or even playing croquet.

Pimms is such an old fashioned drink, however, that it’s time to reinvent our perfect summer cocktail and goodness knows there are lots to choose from. A lot of people enjoy frozen daiquiris and margaritas, but I find them a little strong when you’re lying in the heat of an Australian summer so I prefer longer cocktails such as the Blue Lagoon or the Fire Engine.

The Blue Lagoon

A Hit in Looks and Taste!

The Blue Lagoon is a long-time favourite and is the reason I always have a bottle of Blue Curacao in my house (although there’s lots and lots of other delicious Blue Curacao cocktails that are also delicious).

To make it you will need the following ingredients:-

30ml Vodka
15ml Blue Curacao
Lemonade

Fill a long glass with ice and pour on the vodka and blue curacao, next fill the glass up with lemonade stirring gently as you go. The result is sure to be a hit with anyone at any summer get together.

The Fire Engine

Another Gorgeous Summer Cocktail

The Fire Engine always looks nice which is something I like in a cocktail – if you’re going to drink a beverage that doesn’t look nice or exciting then you might as well stick to a glass of wine or a beer. In looks the Fire Engine looks exactly like a Tequila Sunrise, however tequila isn’t my friend or a friend to a number of my friends which is why I’m happy to say it doesn’t reside in this delicious cocktail.

To make your delicious Fire Engine you will need the following -

30ml Vodka
Orange Juice
2 Dashes of Grenadine (that's about a 1/4 of a teaspoon)

Add ice into a highball glass and then add the vodka and orange juice, stirring them together to mix. Next you need to tip the glass to one side and pour the grenadine down the side, now whenever you see recipes for drinks like this they say you do this by flipping the bottle vertically very quickly - not how I do it! I put my couple of dashes into a drinks measure and pour it from there as it gives me more control.

Fire Engine Cocktail
Fire Engine Cocktail

As you can see from the photo the grenadine falls straight to the bottom, but it works its way up giving an impression of a sunrise. I usually just stir it all together when I start to drink, but I do like the look when it's first served up!

Kahlua Coke Float

A Fun Summer Drink for Adults

I remember when I was a teenager I loved to go out for a coke float and my local café made the best coke floats ever – I know it’s true because people have said it on facebook!! I also enjoy just about any cocktail with Kahlua in it so when I heard of a drink that seems to have the best of both of these worlds I just had to try it.

The result was delicious and all you need are -

1 scoop vanilla ice cream
30 ml Kahlua
Coke

I use a licensed coca-cola glass to make mine, I definitely think you need more volume in your glass than the standard highball glasses offer.

Put the scoop of ice cream in the glass and pour over the Kahlua, next it's time to add the coke and if you've ever made a coke float before you'll know to add it slowly because it will fizz up and make one heck of a mess if you add it too quickly!

Pop in a straw and close your eyes as you enjoy the nostalgia of childhood coke floats combined with a delicious mix that is almost a cross between a Black and a White Russian - sensational!

Another perfect drink for sunny afternoons, heck I’d even enjoy this if it was raining!

A Strawberry Basil Sparkler

A cocktail recipe that I came across recently has intrigued me and although I haven’t tried it yet I think this might be perfect for summer as I always think of strawberries and cream when the suns beating down and this has the strawberry part of that combination……. A Strawberry Basil Sparkler.

You will need the following -

2 strawberries, thinly sliced
4 basil leaves roughly torn
30ml vodka
sparkling water

Take a tall glass and layer ice, strawberry slices and basil leaves into it, next pour in the vodka and top up with sparkling water. Doesn't it sound like an interesting cocktail? I will add my thoughts once I get around to trying it which will probably be the next time I get some basil in the house.

Summertime Bellinis

Bubbles and Summer - Perfect!

Bubbles are always nice to drink so don’t discount a delicious Bellini, but forget about the Peach Bellini it’s so last millennium! Instead of using peach puree in the bottom of your champagne glass try adding pureed mango and then topping up with your Prosecco while stirring gently. If you’re in the minority like me and don’t like mangos (apparently I’m crazy!) then a Raspberry Bellini may be just up your alleyway.

Sometimes brought raspberries don’t have a lot of flavour and if you find that yours don’t taste as good as they sometimes do then add a few drops of raspberry liqueur to your tablespoon of puree in the bottom of a champagne flute, top up with the Prosecco while stirring gently and there you have a beautiful summertime cocktail full of bubbles.

Delicious cocktails to make your summer a very delicious and happy one!

Champagne Cocktails

Champagne

Delicious Champagne Cocktails for any occasion.
Champagne is the name given to the bubbly white wine from the Champagne region of France. Moet & Chandon, Dom Perignon and Bollinger are famous brands that are known the world over. Champagne first found favor with the French Royal family which is where it became associated with being an upper class drink.

During the 1920s the Champagne Cocktail was found to be extremely popular amongst the 'Flapper set' which added to the allure of bubbles. In more recent times it was a popular drink for Patsy and Eddie on Absolutely Fabulous!

When it comes to Champagne cocktails I substitute any nice tasting sparkling white wine. The rule of thumb for me is if I would drink it on it's own then I'll use it in a cocktail, if I wouldn't drink the champagne then it will not be going into a cocktail!

The Classic Champagne Cocktails

The original Champagne Cocktail is a true cocktail classic, it was originally served in champagne cups something which is rarely seen now. Serving a Champagne Cocktail in a champagne flute is a much better experience as the shape of the flute captures the bubbles perfectly.

Another classic Champagne cocktail is the Mimosa or Bucks Fizz depending on where you live in the world. I usually serve Bucks Fizz in a pitcher as its great for a girls day out or a brunch where you don't want to be always mixing new drinks

Champagne Cocktail

1 sugar cube
angostura bitters
chilled champagne
lemon twist

Place the sugar cube in the bottom of a champagne flute and put a few dashes of angostura bitters onto it. Next fill with champagne, stir and garnish with the lemon twist.

Bucks Fizz

3 parts Champagne
2 parts Orange Juice

Place 2 cups of Orange Juice in a pitcher and top up with 3 cups of Champagne, a quick stir and then pour into Champagne flutes to serve.

Romantic Champagne Cocktails

If you're feeling romantic and want to impress someone special on one of your first dates, their birthday or even Valentines Day then try a Cupid's Bow, Flirtini or an Axis Kiss.

Cupid's Bow

5 oz Champagne
½ oz cherry liqueur

Pour the cherry liqueur into a Champagne flute and fill with chilled Champagne.

Flirtini

1 shot vodka
¾ shot triple sec
2 shots pineapple juice
champagne

Put the vodka, triple sec and pineapple juice into a shaker with ice and shake well. Strain into a cocktail glass and top up with champagne.

Axis Kiss

1 dash amaretto
1 dash creme de cassis
Champagne

Pour both the amaretto and crème de cassis into a Champagne flute and then top up with chilled Champagne.

Even More Champagne Cocktails

For more delightful Champagne cocktails you simply must try the Sparkling Cosmo, a cosmopolitan with bubbles! The Pink Slipper and Champagne Cooler are other delightful Champagne cocktails to try.

Sparkling Cosmo

1 ½ shots citron vodka
½ shot triple sec
1 shot cranberry juice
I dash fresh lime juice
Champagne

Place the vodka, triple sec and juices into a shaker with ice and shake well. Strain into a champagne flute and top up with chilled champagne.

Pink Slipper

1 part cointreau
1 part bacardi
3 parts champagne
4 strawberries

Blend together the cointreau, bacardi, strawberries, pour into a Champagne flute and top with Champagne while giving it a gentle stir.

Champagne Cooler

3 parts brandy
2 parts triple sec
Champagne
fresh mint

For this cocktail you simple put the brandy and triple sec in a red wine glass top up with Champagne and stir. Garnish it with a sprig of fresh mint to serve.

Is It Margarita Time?

The most classic of tequila cocktails has to be the Margarita, this robust cocktail can be enjoyed straight up, on the rocks or frozen. There are also lots of variations so let's look at Margaritas.

The Margarita Cocktail

Summer time is when the Margarita really holds its own. There are not many cocktails that are robust enough to be enjoyed in a frozen form as the Margarita is. A popular cocktail for Mexican parties, pool parties or cocktail parties the Margarita can be easily prepared by the pitcher or by the glass.

With so many flavored liquors on the market the Margarita has been transformed with the different varieties available, we have several recipes on this site just waiting for you to try.

Little is known about the true origin of this Mexican cocktail, but the name Margarita is known the world over. It is such a popular cocktail in the USA that it even has it's own national day to celebrate.

Now why don't you take a walk with me through the history of the Margarita and then we can look at what makes the perfect Margarita. Next we can party on through a number of recipes and useful or useless facts along the way. Are you ready to Party Margarita style?

History of the Margarita

Margarita's Origins

There is so much confusion over the origin of the Margarita that we will probably never know for sure who invented it. There are a number of claims and legends and they date from the middle of the 1930s through to the mid 1940s. As long as we can enjoy the drink, do we really care who invented it???

For those that do, please read on:

Story 1

One day back in 1936 a man by the name of Danny Negrete opened a bar at the Garci Crispo Hotel with his brother, David. The day before Danny's brother David was about to be married, Danny presented his sister-in-law-to-be with a new drink. This concoction was made of equal quantities of tequila, cointreau and lime juice and in honor of the occasion he named it after the bride-to-be. What was her name? Margarita, of course!

Story 2

At a bar called Rancho La Gloria there was a barman by the name of Carlos "Danny" Back in 1938, Herrera had a regular customer by the name of Marjorie King. Now Marjorie was an actress and showgirl who claimed to be allergic to all hard liquor except tequila. Not only was tequila the only liquor she could drink, but she also hated drinking it straight.

Being a good barman Danny tried to come up with a delicious drink for her. Eventually he came up with a drink that was 3 parts tequila, two parts cointreau and one part fresh lemon juice. He named his drink the Margarita.

Story 3

As always this story starts with a barman, this barman was called Francisco "Pancho" Morales and he claimed to have invented the Margarita on July 4th 1942. He was working in a bar called Tommy's Place in Juarez in Mexico when a lady requested a Magnolia. Pancho wasn't very good at remembering the contents of different cocktails, but remembered that it had cointreau in it.

Not to be deterred he mixed the cointreau with tequila and lime juice. This creation was quite a hit, although how he came up with the name Margarita is a mystery.

Story 4

This story has a heroine in it instead of a hero as the only woman who claims to have invented the Margarita was Margaret Sames. Margaret claims to have created the Margarita in her Acapulco bar. She mixed one part cointreau, two parts tequila and one part fresh lime juice together. Then she added the garnish, a rim of coarse salt. The idea for rimming her glasses with salt came from knowing that her customers enjoyed a lick of salt before drinking their tequila.

She apparently simply called the cocktail "the drink" until her husband presented her with some glasses that had her name (in Spanish) engraved on them. Margaret in Spanish is, of course, Margarita.

There are numerous other claims including that it was named after Rita Hayworth (actress) and Peggy Lee (singer), but it will probably always remain a mystery.

Margarita

Margarita Drink Elements

The Balance of the Flavor

What sets the Margarita apart from other cocktails is the balance between the sweet and sour. In the classic Margarita the sweetness comes from the cointreau and the sour comes from the lime juice. It is important to remember to keep this balance when experimenting.

When adding fruit to the equation you must avoid over complicating the recipe by adding too much fruit as it will throw off the sweet/sour balance. One way to avoid this is by adding extra lime juice, another is to use a different liquor to the cointreau. A great example of this is in the Blueberry Margarita where cherry brandy is used instead of cointreau to keep the flavor balance.

Margarita Ingredients

The ingredients of the classic Margarita are tequila, cointreau and lime juice.
101 MargaritasAlthough there are so many different recipes which call for different ingredients.

In this book (opposite) by mixologist Kim Haasarud you will find (as the title suggests) a plethora of Margarita recipes.

As the book quips Margarita's put the happy into happy hour.

If after reading this site you are hungary for more Margarita information then buy the book!

Tequila

A Mexican Spirit

Not all tequila is created equal and if you want to mix a great Margarita then you need to use good ingredients.

There are actually four main types of tequila which are blanco, gold, reposado and anejo.

Types of Tequila

Blanco Tequila

Blanco or silver tequila is clear in color and has the most distinctive tequila taste and strength.

Gold Tequila

Gold tequila is blanco tequila that has had other flavorings added to it (usually caramel flavors). This leads to a more mellow flavor.

Reposado Tequila

Reposado means rested and reposado tequila is basically blanco tequila which has been aged in white oak casks for between two months and one year. The result is a tequila that has a delicate golden color.

Anejo Tequila

Anejo means aged. Anejo Tequila is blanco tequila that has been aged in white oak casks for over a year. This tequila has a real depth of flavor as it has been rested like a good wine.

Cointreau

Information on This Orange Liqueur

Instead of using a sugar syrup as some cocktails do such as the daiquiri, the Margarita gets it's sweet element from cointreau.

Cointreau is a liqueur made from both sweet and bitter orange zest. By using an alcoholic sweetner to the mix the result adds another depth to the Margarita.

Cointreau is often replaced by other sweet liqueurs when different types of Margarita are made, attention must be paid to keep the sweet/sour balance however.

Lime Juice

For the perfect Margarita only fresh lime juice will do. It may be easier to use a bottled lime juice such as Roses, but these are usually sweeter than the fresh juice. This throws off the sweet and sour balance that is so crucial to making the best Margarita.

Citrons Verts

Hint

To get more juice out of your limes roll them on the counter top first before squeezing.

Squeezing the Fresh Lime Juice

As I said earlier using FRESH lime juice is the key and I really recommend getting a lime or citrus juice press to help with this, here's one in the style that I like -

No.1 Lemon Squeezer - Premium Quality Stainless Steel Citrus Juicer - Jumbo Size Professional Press
These citrus juicers come in different sizes, I have the lemon juicer myself and I find it works well with both lemons and limes so don't feel you have to get the smaller size for limes.

Save yourself a bit of money to put towards your other ingredients and just get the lemon citrus squeezer for your cocktail bar.

To Rim or Not To Rim

A Margarita Quandary

Whether or not to rim your margarita glasses is a personal choice. Some people do not believe that a drink is a true margarita unless they get the salty flavor from the rim. For some people however, the salt is too harsh.

A little trick if you do not like really salty flavours is to add a little sugar in with the salt.

It is important to realise that when we talk about salting the rims we are not talking about using table salt. It is very important that a natural salt is used. There are a number of flavored and colored salts on the market that are specifically designed for rimming glasses.

There are so many different flavors of margaritas on the market, that sometimes sugar should be substituted for the salt on some drinks. A chocolate margarita for example is really NOT suited to a salt rim!

The classic way to salt a Margarita is to rub a lime around the rim of the glass and then to dip the glass into a saucer/plate of salt.

Now however you can buy rimmers which are designed to make the job easier.

Winco GR-3 3-Tier Glass Rimmer with Color Box
I must admit I've never actually used a rimmer although I'd like to get one in the future as they do look better than saucers when you're making margaritas en-masse at a party!

How To Drink Your Margarita?

Margarita Bar

Straight Up

A margarita straight up is when you put all of the ingredients into a cocktail shaker and shake well. You then strain the Margarita into the glass and serve.

On the Rocks

An on the rocks Margarita is when you make the margarita as above. However you put ice cubes into the glass before straining the drink over the top.

Frozen

A frozen Margarita is a great drink to have on a hot summers day. To make a frozen margartia you will need a blender and ice, further instructions can be found further down, along with some recipes.

Margarita Recipes

Margarita

3 parts tequila blanco
1 part fresh lime juice
1 part Cointreau

Rim your margarita glass with coarse salt. Place all of the ingredients into a cocktail shaker with ice and shake. Next strain the contents into the glass taking care not to dislodge the salt rim. Garnish with a lime wheel if desired.

Margarita Royale

3 parts tequila blanco
1 part lime juice
1 part creme de cassis

This drink does not need to have a salt rim, but using the "Apple Martini Cocktail Sugar" can give you a delicious complimentary taste sensation. Shake all of the ingredients together with ice in a cocktail shaker. Strain into the margarita glass to serve.

Top Shelf Margarita

3 parts tequila anejo
1 part lime juice
1 part Grand Marnier

Rim your margarita glass with coarse salt. Place all of the ingredients into a cocktail shaker with ice and shake. Next strain the contents into the glass taking care not to dislodge the salt rim. Garnish with a lime wheel if desired.

Frozen Margaritas

On a hot summers day you can't go past a frozen drink. The problem with alot of frozen cocktails is that they end up tasting too watery. The tequila in Margaritas, however, is robust enough to make the transistion to a frozen drink easily.

To make a thirst-quenching Margarita you first need to put all of the ingredients into a blender, next add enough ice to cover the blends and blend. Turn the blender off and add more ice then blend. Keep doing this until you get the required consistency.

The alternative is to invest in the Margaritaville DM1000 which will help you to achieve the best consistency every time.

Margaritaville DM1000 Frozen Concoction MakerThis machine actually shaves the ice instead of chopping it which gives it a lovely “restaurant quality” consistency that is sometimes missing from frozen Margaritas made at home.

It is a really easy to operate machine, simply fill the ice chamber with ice, pour the drink mixture into the pitcher and set the machine to how many servings you want and away you go. Perfect Margaritas everytime.

You can even use these to make frozen Daiquiris or alcohol-free "slushies" to help cool you down during a hot summer.

One point to make is that it is a big machine so measure up before buying. Another thing to keep in mind is that it is heavy, so a top shelf position would be a bad idea.

If you want to serve frozen drinks to your friends however, then the Margaritaville DM1000 is a must have.

Frozen Margarita Recipes

Frozen Strawberry Margarita

3 parts tequila blanco
1 part lime juice

½ oz simple syrup
1 kiwi fruit, peeled and quartered
