No I'm not talking about Michael Jackson's monkey I'm talking about Champagne! I love weekends as the weather fines up because they are ideal for leisurely brunches with the family or friends or just a brunch made for two. What else goes well with brunch? Bucks Fizz, a really easy cocktail to make, simply 2 parts Orange Juice to 3 parts Champers - delicious!
Sometimes though serving Bucks Fizz at my brunches feels a little boring - what do you think? I know it's classic and it's so so so easy, but sometimes I like to do something a little different. Check out my Champagne Cocktails selection for inspiration or try this -
Lou's Dreamy Champagne Cocktail
1 shot orange juice
2 shots pineapple juice
Champagne
Place the juices into a cocktail shaker with ice and shake then pour into a Champagne flute and top up with Champagne - delicious!

Yummy Chocolate Cockails
I love chocolate and I love cocktails which is why it's always nice to put the two together. Chocolate Cocktails has a number of delicious recipes including one for a Chocolate Biscuit. If you're a regular on my blog you will know that I have recently tasted the Hazelnut Kahlua - delicious. I can report a new recipe just for you guys and that is the -
Choc-nut Biscuit
1 1/2 shots cognac
1 1/2 shots dark creme de cacao
1 1/2 shots hazelnut Kahlua
Shake all of the ingredients together with ice and strain into a martini glass to serve. Substituting the Kahlua from the original Chocolate Biscuit recipe and replacing it with the Hazelnut Kahlua takes this cocktail to a whole new level. Let me know what you think.

Summer Means Daiquiris
Daiquiris are a perfect summertime cocktail because they are one of the perfect cocktails to freeze. Along with margaritas daiquiris have a robust enough flavor to avoid tasting watered down when frozen.
Not that you have to have frozen daiquiris in summer, any type of daiquiri would taste nice, but frozen drinks just seem to go hand in hand with lazy summer days, don't you think?

Summer time brings forth the season of the frozen daiquiri. A classic frozen daiquiri is always a refreshing drink, but in summer the most popular seem to be the strawberry and banana daiquiris.
4 parts light rum
2 parts fresh lime juice
1 tsp bar sugar
½ cup cracked ice
lime slice
Combine all ingredients, except the lime slice, in a blender. Blend at low speed until slushy and pour into a chilled champagne flute to serve.

You need to combine all of the ingredients, except one strawberry, with cracked ice in a blender. Blend until smooth and pour into a chilled cocktails glass. Garnish with the remaining strawberry.

1 part fresh lime juice
1 part half-and-half
1 tsp bar sugar
¼ sliced banana
½ cup cracked ice
lime slice
Pop all of the ingredients, except for the lime slice, into a blender and blend at low speed until smooth. Pour into chilled balloon wine glass and garnish with the slice of lime.
Derby Daiquiri
4 parts light rum
2 parts fresh orange juice
1 part fresh lime juice
bar sugar 1 tsp
½ cup cracked ice
Just combine all of the ingredients in a blender and blend at a low speed until smooth. Pour into a chilled champagne flute to serve.

The Bar has Reopened
Hey, I'm back on blogger and I've reopened Dream Cocktails.....
The coolest cocktail lounge on the net is Lou's Cocktail Lounge which is where I've been spending alot of my time.
Now that I'm back I'm going to talk about Kahlua's hazelnut liqueur, in one word - delicious. If you haven't tried this then buy some because you are going to absolutely love it. Now I haven't actually made a cocktail of it yet I have simply drunk it with milk and it's divine, if you like adding Frangelico to your Kahlua then you will love this. I had so many great ideas for cocktails running through my mind as I tasted it, but I kept drinking it with milk......I should add that I was staying at my mums so I didn't have all of my usual bar contents to play with, but now....stay posted!
I will bring you some more cocktails tomorrow, but for now pop out and buy some Kahlua or hang out at Lou's Cocktail Lounge.
